Agar-Agar

Ingredients -
3 Packets of Agar Agar Powder (no pre-mix colouring)900ml of freshly squeezed coconut milk
1.8l of water
300gms sugar
Pandan Leaves (1 bunch)
Food Colouring

Method -
Step 1 - In a saucepan, mix 1 pkt of agar agar powder into 900ml of coconut milk, stir until the powder is dissolved before placing the pot on the stove to cook.
Step 2 - Add 2-3 pandan leaves + 100gms of sugar into the pot of coconut milk mix and bring the mixture to a boil, stirring occasionally.
Step 3 - Once boil, cease fire and pour the mixture into several small bowls (depending on how many colours you wish to add onto the jelly).
Step 4 - Add 1 drop of each of the colour of your preference into the individual bowls of coconut milk mixStep 5 - Let the jelly cool and harden.
Step 6 - Once the jelly is cooled and hardened, cut them into small cubes and add into a big tin/jelly mold, spreading the different coloured jelly evenly in the tin.
Step 7 - Prepare a saucepan and add the 1.8l of water into it.
Step 8 - mix 2 pkts of agar agar powder into the water, stir until the powder is dissolved before placing the pot on the stove to cook.
Step 9 - Add 4-6 pandan leaves + 200gms of sugar into the pot of water & agar agar powder mix and bring the mixture to a boil, stirring occasionally.
Step 10 - Pour the mixture into the big tin ensuring that the mixture covers the cubed coloured agar agar that was previously layed in the tin.
Step 11 - Allow the mixture to cool and hardened before cutting it up and storing it in the refrigerator
