Green Tea Red Bean Delight


Ingredients -
Cake:
200gm cake flour
2 tbsp matcha powder (bakeable green tea powder)
3 tbsp baking powder
1/2 tsp salt
70gm icing sugar
4 egg yolks
100gm salad oil (I used melted butter instead)
170gm milk
2tsp vanilla extract
6 egg whites
80gm caster sugar

Topping:
Whipped Cream
Canned sweetened red beans

Method of preparation -
1) Sift cake flour, icing sugar & baking powder together; add salt - mix well
2) Dissolve matcha powder in milk
3) In a separate bowl mix egg yolks, oil, vanilla essence
4) Combine the above (no. 1 - 3 items) together
5) Whisk egg white & caster sugar until stiff, with an electric egg beater
6) Add the whisked egg white into the combined batter a little at a time; mix well
7) Pour it into a 14cm x 14cm cake tin (lined with baking sheet rubbed with butter)
8) Bake it at 180 deg cel for 22-25 mins
9) Let the cake cool after taking out from the oven
10) Top it with a layer of whipped cream and add the desired amount of red bean on top
