Easy Peasy Cookies

Ingredients :
320gms Butter
600gms Self Raising Flour
180gms Icing Sugar
2 tbsp Chocolate Rice (you could add more if you like)
2 tbsp Crushed Almond (add more if you like)
2 Eggs (1 for the dough; 1 egg yolk for brushing onto the surface of the cookie)
20ml fresh milk

Method :
1) Sieve flour & icing sugar into a large bowl
2) Add soften butter & 1 egg slowly into the flour/sugar mixture and knead together
3) Add in the chocolate rice & crushed almonds into the mixture
4) Roll the dough and flatten it; then use cookie cutter to cut out the desired shapes of the cookie
5) In a separate small bowl beat egg yolk and add 20ml fresh milk - set it aside
5) Bake 15-20 mins in preheated 180 degree celcius oven
6) Lightly brush Egg Yolk + Milk mixture onto the surface of each cookie
7) Bake for another 5-8mins in oven at 180 degree celcius
